My favorite time of year in the Northwest is Summer. It’s just so beautiful outside! Between the bright green leaves, the blue sky and the very long days, there is just no place like home.
We spend many evenings outside with twinkling lights, wine, music and sometimes fun shows on Netflix. Here is an easy meal I created for a fun night with wine.
Garden fresh lettuce, carrots, peas, forbidden rice and lots of tofu sprinkled with salt, garlic and onion seasoning. A dash of balsamic vinegar and olive oil. A nice red wine to enjoy the evening with. I have been enjoying a nice Oregon Pinot lately. Cheers to a healthy happy summer evening!
