My love of cashews

Who doesn’t love cashews? My memories of cashews go way back when I was a small girl in Santa Barbara visiting Sears and Roebuck. They use to have a candy/nuts counter. My mom would buy my brother and me a bag of warm cashews and a bag of swedish fish. She got to shop and we got to munch. Now I know why I am still in love with both these treats. Fun memories and they smells were so wonderful. I love to buy swedish fish for my grandkids.

My love for cashews grew when I found out I am unable to digest dairy. I found that cashew recipes make the best cream sauces, fillings and cheeses. I do not miss dairy because of cashews. I love cashews for snacking. A few cashews go a long way. Did you know they do not have as much fat content as other nuts? Did you know they taste sweet and like melted butter?Another reason I love cashews. Soak, grind or eat whole. They are the best!

The cashew is packed with soluble fiber, and a handful of cashews per day contains enough minerals to help boost your immune system. They also contain monounsaturated fatty acids that prevent inflammation.

So the next time you are looking for a fun healthy comfort food snack, try a handful of nice warm lightly salted cashews. Or create a smooth cashew cream sauce for your next recipe or my favorite add cashew butter to a low sugar chocolate bar. YUM!
