I make this recipe all the time to brighten up a meal. It’s easy and coleslaw is great as a side dish or a topping for tacos, hot dogs, sandwiches and fish. Add a little pickled onion on top and it’s a bright colorful tasty dish.
Recipe:
- 1 half head of Green cabbage – sliced thinly
- 1 half head of Purple cabbage – sliced thinly
- 1 c. Sliced carrots (I buy a bag)
- 2 green onions – sliced thinly
- 1/2 – 1 cup mayonnaise ( I use vegan)
- 1 TB Apple cider vinegar
- 2 TB sugar ( I have used coconut sugar or monk) – Add more if needed – sweeten to taste!
Mix all ingredients together. Start with 1/2 cup of mayo and 2 TB sugar and build the salad from there. If you need more add more. You have to keep in mind coleslaw as it sits liquifies a bit and sweetens as you go. So don’t go overboard!
The longer the coleslaw sits the better it is! I make it the early in the day and stir it around once in awhile. Let it sit in your refrigerator and when dinner is ready serve it on your favorite recipe or it makes a great side dish.
(I have been using monk fruit sugar the past few times and we really like the taste) Less sugar is so much better for you. Also I highly recommend Just Mayo or Best Foods Vegan Mayo) Enjoy!
